Tiramisu!

It is the perfect combination of pastry cream cheese, cake, coffee and a hint of chocolate…HEAVENLY!

I think a picture speaks a thousand words..and well…this one does a pretty good job. 

Last week (sorry it took me so long to post it) I decided to make tiramisu, something different to change it up a little bit from cupcakes (not that i don’t LOVE baking does)

Well you see, tiramisu is a dessert I personally love and therefore am terrified of baking. After a good research I found out it is not as hard as one may think…well if you are not like me and like to do everything from scratch at least!!!!

Anyway..for this version of tiramisu i used a from scratch EVERYTHING…and here it goes…

Ladyfingers

This cookie is PERFECT, i mean it (at least the once i baked) they were fluffy, had a delicious vanilla flavored and a crisp…MY GOD! Almost eat them before even starting the rest of the dessert… But well..i found this recipe from a video, but added a few changes.

You will need:

5 Egg Whites
5 Egg Yolks
2/3 Cup of White Sugar
1 Teaspoon of Vanilla Extract
1 Cup of Plain Flour
1/2 Teaspoon of Baking Powder

Instructions: 

  1. Take your egg whites and two tablespoons of sugar and start mixing them until you get firm picks (you’ll know when they are ready if you turn your bowl over and they don’t fall! ). Once they are ready place them aside
  2. In a separate large bowl start mixing your egg yolks, vanilla and sugar until you have a nice pale yellow and smooth mixture.
  3. Add half of your egg white mixture to your egg yolk mixture and fold them in gently.
  4. Add 1 cup of sifted flour to your mixture, fold it in.
  5. Add the rest of the egg whites and fold them gently.
  6. BAKING: There is different ways you can bake it i personally prefer to bake it like a cake in the shape of the container I will use to make the tiramisu. If you choose to do it by baking cookies all you have to do is take a wilton bag and a tip and pipe your cookies into a tray with parchment paper.
  7. Time: about 10 – 15 min per tray!
  8. Let them cool down in a rack

Custard 

This custard…is heaven I have no other words to describe it. It is delicious and soft and fluffy and a MUST to try!!! This recipe I also found in a video and well I LOVE IT! One of the best things i have found!

You will need:

6 egg yolks
6 egg whites
140 g sugar
500 g mascarpone cheese

Instructions 

  1. Beat the egg yolks and half of the sugar together until you get a pale yellow mixture. Beat in the mascarpone cheese. Set aside.
  2. In a separate bowl beat the egg whites and half of the sugar until stiff peaks are formed.
  3. Take half of the egg white mixture and fold it into the egg/mascarpone mixture. Continue folding in until all your egg whites are incorporated. **remember to be gentle and careful while doing this!**
  4. Place in the fridge for 30 min.

Tiramisu 

Now…you have everything you need to make your dessert! Wasn’t it easy? And trust me it is so rich and delicious everything is worth it!

You will need

Ladyfingers
Custard
1 cup of espresso (sweetened to your liking)
1 glass mold
**unsweetened cocoa powder for garnish**

 Instructions

  1. Place a spoon full of custard and spread it in your mold.
  2. Take your ladyfingers and submerge them in the espresso (careful not to get them overly wet)
  3. Make a layer of custard (BE GENEROUS!!)
  4. sprinkle some cocoa powder
  5. Repeat all your steps!!
  6. Once you are done with all your layers let it rest in the fridge for 4 -6 hours (this is important for all the flavors to get together!)

**If you, like me did a cake ladyfinger use a spoon to sprinkle your coffee or a cooking brush!**

and…now ENJOY!…trust me…you will want to eat it ALL
